From the heart of Lisbon, we’ve built a roastery that’s not just about the perfect roast—it’s about creating something truly special. We’ve invested in the finest equipment, sourced beans from the most dedicated farmers, and honed our craft so we can share with you the essence of each coffee's origin. Every batch we roast tells the story of the land, the people, and the care that went into it, and we are honored to be a part of that story.

Why We Care About Specialty Coffee

Some of our coffees come directly from farms, offering complete transparency and traceability. One such example is our Rwanda Microlot from Macuba Sector, Nyamasheke, produced by Gasharu Coffee. We were proud to meet the farmer personally at World of Coffee — a testament to how close we are to the source.

For several other coffees, we maintain partnerships with the same farms, purchasing harvest after harvest. This consistency not only ensures quality for us, but also provides farmers with a stable, predictable demand that they can rely on. We also buying microlots, supporting farmers who focus on quality over quantity.

Beyond the farms, we actively support supplier programs with strong environmental commitments. Several of our coffees have made their journey to Europe by sail, offering a shipping solution that is 70–90% carbon-free. It's one of the ways we ensure that our coffees don’t just taste good — they also travel responsibly.

Meet Our Roaster: Sara

Behind every perfectly roasted bean at The Folks is our talented roaster, Sara. With years of experience and a deep passion for coffee, Sara brings a unique touch to every batch she roasts. Her meticulous attention to detail ensures that each coffee we produce is crafted to perfection, highlighting the rich flavors and nuances that make our beans special.

Sara’s journey in coffee began long before she joined The Folks. She has worked with some of the best roasters in the industry, honing her skills and knowledge along the way. But what truly sets Sara apart is her dedication to the craft. She believes that roasting is both an art and a science, requiring precision, intuition, and an unwavering commitment to quality.

When Sara isn’t roasting, you’ll find her learning new things about coffee and roasting, exploring coffee farms and receiving sampls, or working closely with our team to ensure that every cup of coffee we serve is as exceptional as the last. Her work in the roastery is the backbone of The Folks’ commitment to quality, and we’re proud to have her as part of our team.
